Grab and Go Breakfast

009                                                                                                          Need something really fast to get you energized for a busy day ahead?  Most of us have those days that we need protein for energy but do not have the time to make an elaborate breakfast during the week. Try this “Grab and Go” breakfast that you can also prepare the day before.  It’s called Muffin Frittatas and will please most of the fussiest eaters.    It’s also very versatile in that you can change the ingredients  to your liking or to provide variety.  Easy to prepare, delicious, and minimal calories (not to forget that), how great is that?

Muffin Frittatas

6 eggs

1/2 cup milk

1/4 t. salt

1/8 t. pepper

1 cup cheddar cheese (or other firm cheeses)

1 cup chopped zucchini (or try veggies such as spinach, diced potatoes, etc.)

1/4 cup chopped sweet red pepper

2 T. chopped red onion

  1. Heat oven to 350 degrees.  Beat eggs, milk, salt and pepper in medium bowl until blended.
  2. Add cheese and vegetables; mix well.  Spoon evenly into well greased muffin cups about 1/4 cup each.
  3. Bake in 350 degree oven until just set about 20-22 minutes.  Cool and remove.  Serve warm or refrigerate and warm in the microwave when ready to eat.

Makes six servings (two of the muffin frittatas) 163 calories per serving.
